5 chicken thighs
1 tablespoon olive oil
1 tablespoon thyme, chopped
2 garlic cloves, minced
1 teaspoon red pepper flakes, crushed
½ cup heavy cream
¾ cup chicken stock
½ cup sun dried tomatoes in olive oil, drained and chopped
Salt and black pepper to taste
¼ cup parmesan cheese, grated
Basil leaves, chopped for serving

  1. Get a pan and heat with the oil over medium high heat, add chicken, salt
    and pepper to taste, cook
  2. for atleast 3 minutes on each side, transfer to a plate and leave aside for
  3. Return pan to heat, add thyme, garlic and pepper flakes, stir and cook
    for 1 minute.
  4. Put the rest of the fixings except the basil, stir and bring to a simmer.
  5. Add chicken pieces, stir, place in the oven at 350 degrees F and bake for
    15 minutes.
  6. Divide between plates and serve with basil sprinkled on top.
