INGREDIENTS:
1 pound extra-lean ground beef
½ cup panko breadcrumbs
¼ cup grated Parmesan cheese
¼ cup low-fat milk
2 large eggs
1 tablespoon chopped fresh parsley
1 teaspoon chopped fresh oregano
1 teaspoon minced garlic
¼ teaspoon freshly ground black pepper

DIRECTIONS:

  1. Preheat the oven to 400°F.
  2. Using a huge bowl, combine the ground beef, breadcrumbs, Parmesan
    cheese, milk, eggs, parsley, oregano, garlic, and pepper. Season lightly
    with salt.
  3. Roll the beef mixture into 1-inch meatballs and arrange on a baking
    sheet.
  4. Bake the meatballs until they are cooked through and browned, turning
    them several times, about 20 minutes. Serve with a sauce such as
    Marinara Sauce or stuffed into a pita.
